Roasted Winter Veggies

I’m really loving my weekly batch of local, fresh and organic groceries delivery. It encourages me to try new recipes and ingredients I would normally not go for.

This one is a super easy roast. All you need to prep is wash + cut/slice veggies + marinate them in delicious spices + roast!

Veggies used for this roast:

  • Brussels sprout
  • Yam
  • Kale 
  • Zucchini

Spices (key to delicious flavourful roast)

  • Fresh grated garlic (to taste)
  • Olive oil
  • Onion and garlic powder
  • Herbs (dry or fresh) You can mix whatever herbs you love. I used a little bit of mustard, tarragon, basil, thyme
  • Black pepper/cayenne pepper for extra kick
  • Salt to taste

First, preheat your oven to 425º F. Then wash and cut your veggies to how you like them. Cubes, medallions etc. Try to keep the sizes similar so they cook around the same time (root vegetables take a bit more time than kale for instance)

Put everything in a big bowl and then add oil and spices. Mix em’ up!

Then, in a flat roasting pan spread all the veggies. Make sure they’re not covering each other up.

When oven is ready, place the pan and roast for 10 min. Stir veggies around and roast for another 10-15min stirring as you go. Add another 10 min (They can burn easily so keep an eye on them!) The smaller the veggies, the faster they will cook. Remove from oven when ready and let cool.

Look at the roasted goodness! 🤤 So comforting and healthy. The kale was super crunchy and flavourful 👌

Mix it up with rice, noodles, whatever you want!
