Roasted Sweet Potato and Asparagus Red Curry Soup

  • 1 bunch asparagus
  • 2 cups sweet potato, cubes 
  • 1/2 red pepper
  • 1 green onion
  • 3 cloves garlic, minced
  • Salt and pepper
  • 4 cups water
  • 4 tbsp red curry paste
  • 1 can coconut milk
  • Olive oil
  • Salt and pepper


  1. Preheat oven to 450ºC
  2. Chop ingredients. In a large bowl mix all the ingredients with some olive oil, salt and pepper.
  3. Spread everything evenly out in a large baking tray.
  4. Bake for 20 minutes, checking make sure nothing is burning (oven temperature varies)
  5. Remove from oven, transfer to pot. Add 4 cups of water (or broth of your choice) and red curry paste. 
  6. Bring to boil, remove from heat. Add coconut milk and blend
  7. Serve by itself or with some rice or noodles
