I’ve been making a lot of Peruvian soup lately. Aguadito de Pollo directly translates as watery chicken. It’s essentially chicken soup with a twist. It’s rich in flavour, super comforting and has a little spicy kick. Dare to try?
Ingredients
2 chicken breast (or 4-6 chicken thighs)
1 red onion, minced
1/2 red pepper, cut in slices
2 small carrots, cubed
3 yellow potatoes, chopped in chunks
1 cup blended cilantro leaves (around 1 whole bunch) + splash of water
1 tbsp aji amarillo (Peruvian yellow pepper sauce, you can get this in specialty stores)
1 cup peas (fresh or frozen)
Salt, pepper and dash of cumin
1L box chicken broth (low sodium)
Steps
To make cilantro mix: blend around 2 cups of cilantro leaves with dash of water. Maybe around 1/3 cup of water to mix. Set aside
If using chicken breast, cut into cubes.
Heat a large pot in medium high. Add oil when pot is warm. Add in chicken, season with salt and pepper. Cook till golden on each side. Make sure it doesn’t stick to bottom. Remove the chicken from pot, keep the oil in
Add more oil if necessary, add in the onion and a dash of cumin. Cook until brown and transparent to get all the aroma out. Add in cilantro blend and ají amarillo sauce. Cook for a couple of minutes, stirring often
Add in red pepper, potatoes, peas, carrot and chicken. Pour in broth
Cook on high and once it’s boiling bring down to simmer for around 45 min. Season to taste (salt and pepper)
While soup is simmering you can make some pasta, rice, quinoa or anything you would like to eat this soup with
