What do you do when you have way too many cherry tomatoes? (fresh and wrinkly ones) Well you make them even more wrinkly by roasting them! I’m not a huge fan of raw tomatoes. The only way I can have lots of them is when they’re cooked. Hence this yummy roast!
Ingredients
- 2 pints of cherry tomatoes (however much you want to roast really)
- 2-3 cloves fresh minced garlic
- Olive Oil
- Pepper (to taste)
- Salt (to taste)
Instructions
- Preheat oven to 375ºC
- Wash and rinse cherry tomatoes and half them
- Transfer them to a big bowl. Add in the minced garlic, olive oil, salt and pepper
- Mix it good
- Bake for 10 minutes and give it a little stir. Bake for another 10 minutes
- Voilá! To be enjoyed by itself or mix them into salads. Like this refreshing mozzarella cucumber salad
