20 Min Cherry Tomatoes Roast

What do you do when you have way too many cherry tomatoes? (fresh and wrinkly ones) Well you make them even more wrinkly by roasting them! I’m not a huge fan of raw tomatoes. The only way I can have lots of them is when they’re cooked. Hence this yummy roast!

Ingredients

  • 2 pints of cherry tomatoes (however much you want to roast really)
  • 2-3 cloves fresh minced garlic
  • Olive Oil
  • Pepper (to taste)
  • Salt (to taste)

Instructions

  1. Preheat oven to 375ºC
  2. Wash and rinse cherry tomatoes and half them
  3. Transfer them to a big bowl. Add in the minced garlic, olive oil, salt and pepper
  4. Mix it good
  5. Bake for 10 minutes and give it a little stir. Bake for another 10 minutes
  6. Voilá! To be enjoyed by itself or mix them into salads. Like this refreshing mozzarella cucumber salad
